Skillful chef in Barcelona in Spain recognized with his modern Catalan cuisine. His cuisine is created on the base of traditional Catalan cuisine with fresh seasonal ingredients arranged with his unique interpretation and ideology.

Born and raised in Santa Coloma de Gramenet, located 15 km north of Barcelona, Quintilla graduated from a cooking school in Barcelona and trained at numerous restaurants in Catalonia before reaching an opportunity to hone his skills in El Bulli for a year in 1997. After working as sous-chef at the one-Michelin-starred restaurant, RENO in Barcelona and as executive chef in the four-starred hotel, "Hotel Exe Parc del Valles", he opened his restaurant, “Restaurant Lluerna” with his wife Mrs. Mar Gómez, who is a sommelier, in 2001. His restaurant received one star in Michelin Guide Spain and Portuguese in 2012.

The name Lluerna means gurnard, which is a cheap rock fish used to be given for free for soup stock in fish stores. This name came from Quintilla’s philosophy; gastronomic value does not have to be related to a high price rather, it can be achieved with fresh and humble ingredients found locally. In 2018, another his restaurant, GASTRO BAR VERAT has been opened next to Lluerna.
VERAT means mackerel. As those two restaurants’ names indicate, Quintilla is specialized in fish cuisine, and he miraculously turns ordinary fish into an extraordinary dish.
